Today is the best day in the world….IT JADEN’S BIRTHDAY! Yaaaaaaaay, well it’s his born day…..2yrs ago today I bought a beautiful, healthy baby boy into the world, and it was the best day in the world to me! He weighed in at 6lb 11oz…a small weigh considering all my sisters kids were well over 7lbs!! It was a beautiful day, and just thinking about it know makes me teary, and makes me want to have another baby (almost..lol!!!)

He was well worth all the food cravings, long doctors appointments, bloated swollen feet, the high blood pressure,and the 9hrs of labor…LoL. He was born exactly on his 39th week … I guess he didn’t want to wait the full 40wk term. I don’t blame him, cause mommy was tired of carrying him! I just wanted him out of my belly and into my arms, so I could kiss on him and hug on him and just do the things mommies do to their babies.

He is our first child and maybe our only one, so we have to cherish the precious moments, while he is still a little one, because they grow so fast….I still don’t remember how I got to be the ripe old age of 29! Somewhere in between being a fiance and a crazy person…I matured into a mom, wife and crazier person 🙂 ! If you don’t have children, I can definitely saw when you do….your life will change for the better. They bring you eternal love and companionship…they make you feel happy when your down, make you cards on holidays cards shouldn’t be given on (mommy’s birthday! DON’T REMIND ME I’M AGING! LoL)

We will be planning a party for him, with just close friends and family…he is 2, he will only remember being able to eat more sweets and staying up late! LoL TGIF!! I can’t wait to get off work today, to spend time with my little man…I have to go get sooo much still.

This post isnt a spam or anything like that…I found these site about 2yrs ago- well one was 2yrs ago the other was 1mos ago, and thought it would benefit others. I am a person that is always doing something online,whether it be – looking at videos on YouTube, Blogging, looking at other blogs, shopping or paying bills (grrrrrrrrrrrrrrrrrrrrrr). About 2yrs ago, I was on maternity leave and looking for something to do to make extra money, while sitting on my fat butt waiting for this 6lb 11oz baby to come out, so I searched “work at home mom jobs” and came across this site InboxDollars, this site claims to give you money for taking free surveys, reading emails and shopping…right there I was skeptical, but they give you a $5 sign up bonus, so I was like ok if it sucks I have nothing to lose…IT’S A FREE SITE! I used to use this religiously while on maternity leave, after I got back to work, I quit doing the surveys and all that, so it automatically cancels your account. You can receive your check once you hit $30…before I stopped participating I cashed in like 5 times (wooootwooooot) 2 months ago, I started up again and thought hey…this is something others should know about…so here is it I am sharing everything with you!

same thing…I dont recommend doing both, because they usually have the same email offers, the surveys differ though, that site is SendEarnings this site is prety much like Inboxdollars, but I thought hey sign up for 2 sites double my money…so far I have made about a McDonald’s Value Meal worth of earnings! I dont know what the cash out amount is here, but I believe its $30 as well…here is my account right now, its not that much, but when you tally up the amounts for both sites, I am not doing bad…I dont do lots of shopping like I used to, but they have deals where to get money for joining popular sites, getting approved for credit cards, even money for you checking your credit score for free (well you put in your credit card info, and it charges you $1–so you get a profit of $7) LoL this site helped me pay alot of bills off. . .

Sweet crispy cookies are from the same site that features the Lemon Sables, Keiko’s Cake, she is a world class pastry chef- and she offers novice to expert recipes for cakes, cookies…everything! AGAIN~ Its an awesome site, and I just wanted to share a couple of recipes. These are much similar to the Lemon Sables, but no lemon and more butter!!! (that’s always a great thing!) They are finished off with a dusting of powdered sugar / icing sugar / confectioner sugar. You will need to use a piping bag with a star tip….but if you don’t have one, then u can use a plastic ziploc bag and pip any shape.

The cookies are buttery, crispy and just delicious. I packaged these cookies, along with the Lemon Sables and Chocolate Bar Cookies in 2 tins boxes and handed them to my mom and grandmother as Christmas gifts! They loved them so I hope you do too!

Viennese Sable

Butter 115 g
Icing sugar 45 g
Vanilla sugar 10 g, (i used 1tsp of vanilla extract! -Jaden’s Treats)
Salt 1 pinch
Egg white 30 g
Flour 135 g

  1. Beat the soft butter for a short moment.
  2. Add the salt, vanilla sugar, and the sifted icing sugar
  3. Mix until the sugar completely combined with the butter
  4. Then also add the egg white.
  5. Add the sifted flour and fold in the butter mixture with a spatula.
  6. Use a star tube to pipe out the dough.
  7. Bake for 30 minutes in your pre-heated oven at 170°C (338°F).
  8. After baking, let the cookies cool down completely. Then, powder with icing sugar

Green Tea Marbles Muffins


These are some of the best muffins I have ever made! Its like eating a cup of tea…maybe I will post the recipe, but I didn’t make these to add onto the site! But once I made them and saw how pretty, yummy and simple they are I decided to just add a pic of the muffins I made. My hubby and I loved them, I sent some to my sister and she told me they were delicious! So maybe I will post a video of them soon!

Lemon crisp little morsels are from a site that I am a member of Keiko’s Cake, she is a world class pastry chef- and she offers novice to expert recipes for cakes, cookies…everything! Its an awesome site, and I just wanted to share this recipe. These are lemon flavor cookies, glazed with apricot and lemon icing (delicious, yummy topped with mmmmmmm)

This recipe is a novice level, the ingredients are easy to obtain in a local market…so there is no reason or excuse you can make to not try these delightful cookies.

 

 

Lemon sable

Butter 90 g
Icing sugar 75 g
Flour 150 g
Lemon zests of one lemon
Egg 25 g

All ingredients must be cold

Icing
Apricot jam 100 g
Water 20 ml
Lemon juice ½ lemon
Icing sugar

Whenever I need to make cookies, I use a processor…unless they are piped cookies…less strain on my arms..lol!

Process the butter, icing sugar, lemon zests, and flour until you have lots of beach sand!

Then also mix in the egg.

Wrap the dough in plastic wrap and put it in the refrigerator for 30min-1hr

Flour the table and the dough well. Roll out a 0.1 inches. Use your favorite cookie cutters, then work the
cut-offs into a ball and start over until all the dough is used up. The size of my cookie cutter
is circular 1.3 x 2in.  (I roll my dough out in between 2 sheets of wax paper! The dough wont stick to the wax paper, like it will parchment, and the wax paper wont stick to itself like cling film)

Place the cookies on the baking paper.
Bake for 20 minutes in your pre-heated oven at 180°C (356°F).

While the cookies are in the oven, bring the apricot jam and water to a boil and let it cook until the jam thickens.

After baking, brush the cookies with the cooked jam and set aside until the jam dried.

For the lemon icing, squeeze a lemon and mix in icing sugar until you get a paste consistency…like Elmer’s glue (LoL!!!) I used 5tbsp to 1 1/2tbsp lemon juice.

The PERFECT Cinnamon Buns!

Homemade cinnamon buns, I can hardly think of any three words more welcome on a cold morning. Just saying them is soothing somehow, bringing up flashes of warm, butter-rich bread and icing that is  smooth and luscious. Homemade cinnamon buns, say it, and the tongue does a little dance in your mouth, mmmmmm makes your mouth water as the sound of it!

I love the idea of homemade cinnamon buns, but that’s the problem, I love the idea…the reality is another story. I feel awfully silly saying this, but I’m weary of yeast. Making cinnamon rolls, of course, means working with yeast. That’s where the trouble starts.

The secret, I discovered, is rapid-rise yeast. Unlike active dry yeast, this variety requires no proofing, which-thank goodness!-means it can be mixed right in with the dry ingredients. So the dough is fool proof, because this fool was able to make it- LoL! 

I initially wasn’t going to post this recipe, but after I took a bite of these fluffy, luscious creations….I decided that it would be unjust to sit on this gold mine! So I dont have photos on the process, but I do have pics of the end result!

With this recipe you can put you own spin on it, add lemon or orange zest for a citrusy twist, add raisins or nuts to the filling… to the icing add a tbsp or 2 of rum for adults only buns, or lemon or orange…there are so many thing you can do to tweek it to make it your own! So here is what you need!

DOUGH

  • 1 cup whole milk
  • 3 tablespoons unsalted butter
  • 3 1/2 cups (or more) unbleached all purpose flour, divided
  • 1/2 cup sugar
  • 1 large egg
  • 2 1/4 teaspoons rapid-rise yeast (from 2 envelopes yeast)
  • 1 teaspoon salt
  • Nonstick vegetable oil spray

FILLING

  • 3/4 cup (packed) light brown sugar, (I use Dark – i love the rich molasses flavor)
  • 2 tablespoons ground cinnamon
  • 1/4 cup (1/2 stick) unsalted butter, room temperature

GLAZE

  • 4 ounces cream cheese, room temperature
  • 1 cup powdered sugar
  • 1/4 cup (1/2 stick) unsalted butter, room temperature
  • 1/2 teaspoon vanilla extract


DOUGH

  • Combine milk and butter in glass measuring cup. Microwave on high until butter melts and mixture is just warmed to 120°F to 130°F, 30 to 45 seconds. Pour into bowl of stand mixer fitted with paddle attachment.
  • Add 1 cup flour, sugar, egg, yeast, and salt. Beat on low speed 3 minutes, stopping occasionally to scrape down sides of bowl.
  • Add 2 1/2 cups flour. Beat on low until flour is absorbed and dough is sticky, scraping down sides of bowl. (IF dough is very sticky, add more flour by tablespoonfuls until dough begins to form ball and pulls away from sides of bowl.)
  • Turn dough out onto lightly floured work surface. Knead until smooth and elastic, adding more flour if sticky, about 8 minutes. Form into ball.
  • Lightly oil large bowl with nonstick spray. Transfer dough to bowl, turning to coat. Cover bowl with plastic wrap, then kitchen towel. Let dough rise in warm area until doubled in volume, about 2 hours.

FILLING

  • Mix brown sugar and cinnamon in medium bowl.
  • Punch down dough. Transfer to floured work surface. Roll out to 15×11-inch rectangle. Spread butter over dough, leaving 1/2-inch border. Sprinkle cinnamon sugar evenly over butter. Starting at 1 long side, roll dough into log, pinching gently to keep it rolled up. With seam side down, cut dough crosswise with thin sharp knife into 18 equal slices (each about 1/2 to 3/4 inch wide).
  • Spray two 9-inch square glass baking dishes with nonstick spray. Divide rolls between baking dishes, arranging cut side up (there will be almost no space between rolls). Cover baking dishes with plastic wrap, then kitchen towel. Let dough rise in warm draft-free area until almost doubled in volume, 40 to 45 minutes.
  • Position rack in center of oven and preheat to 375°F. Bake rolls until tops are golden, about 20 minutes. TURN THE TRAY AFTER 10MIN OF BAKING THIS HELPS EVENLY COOK THE BUNS!
  • Remove from oven and invert immediately onto rack. Cool 10 minutes. Turn rolls right side up. 

GLAZE

  • Combine cream cheese, powdered sugar, butter, and vanilla in medium bowl. Using electric mixer, beat until smooth. Spread glaze on rolls. Serve warm or at room temperature.

These cupcakes were awesome, they didn’t have a very citrusy flavor to the cake, but the frosting made up for it! I like citrus fruit flavored things, the tart the better; and being that I am a Florida native, citrus fruits are abundant here. Everything from limes, oranges, grapefruits, and key limes, Florida is the best when it comes to having fresh citrus fruit available! Soooo I decided to make key lime pie, a nice key lime flavor custard in a lightly sweetened crust; then I started to realized that if I made a big pie…I would probably eat it in one sitting, so I decided to make cup cakes! For some reason I tend to eat cake less than pie…weird! Well anyways here is the recipe!  Enjoy!!

Recipe:

  •  2sticks Softened Butter, Divided in 12tbsp and 4tbsp
  • 1 cp Sugar
  • 1 tbsp Finely Grated Lime Zest, Divided, (or 2tbsp key lime or lime juice)
  • 3 Large Eggs
  • 1 tbsp Lime Juice
  • 1 tsp Vanilla Extract
  • 1-½ cp Self-Rising Flour
  • 8 ounces, weight Cream Cheese, softened
  • ½ cp Condensed Milk
  • ½ cp Icing Sugar

Preheat oven to 400 degrees.

Line a 12-cup muffin tin with cupcake papers.(I used a 24-cup mini cupcake tin-Jaden’s Treats)

Beat 12 tablespoons butter, sugar, and 1 1/2 teaspoons lime zest until light and fluffy.(I used lime juice for more of a tart flavor – Jaden’s Treats)

Starting adding the egg,

Beat in lime juice and vanilla until just incorporated.

Flour until each is thoroughly incorporated.

Divide batter evenly among prepared pans.

Bake until golden brown, 15 to 17 minutes.

Remove from oven, let cupcakes stand a couple of minutes; turn onto a wire rack to cool.

Key Lime Frosting

Beat remaining 4 tablespoons butter, 1 1/2 teaspoons zest, and the cream cheese until smooth; beat in condensed milk and sugar.

Frost and serve.
